The origins of the Gingerli: a spiced speciality
The Gingerli is a gingerbread which draws inspiration from Swiss gingerbread, such as the Basler Läckerli, and Northern European pastries, such as English gingerbread or German Lebkuchen. The name 'Gingerli' reflects this dual heritage, using the English word “ginger” and adding a little German Swiss touch in the form of the “-li” affixed at the end. The Gingerli combines the richness of traditional gingerbread with the lively addition of ginger, a flavour often associated with the festive season.

How do our pâtissiers make the Gingerli?
Just like the Leckerli, making Gingerli requires good doses of meticulous technique and indulgence. Prepared in the traditional way in a copper confectioners’ bowl using honey, sugar, candied fruit, powdered almonds and spices, the Gingerli dough is left to rest, so its flavours can fully develop. It is then rolled out, cut into small pieces and baked at a low temperature to preserve its softness…
