Our very first creation: the Macaron de Riquewihr
We can’t talk about the Macaron de Riquewihr® without talking about the creation of the Maison Alsacienne de Biscuiterie. Our story began in 1996, in Riquewihr, one of the most beautiful villages in France. It was in a little bakery store that we came up with our first creation: the Macaron de Riquewihr.
Its original recipe (which remains the same to this day) is the perfect balance of patisserie alchemy between coconut and cane sugar: high-quality, exotic ingredients that give this little biscuit its incredible and unique depth of flavour. This speciality draws on flavours from far-off lands and pairs them with the traditional spirit of our Maison, creating a delicious new take on the art of Alsace biscuiterie. Coconut macarons, coconut rochers and Macarons de Riquewihr are often confused, but there are some notable differences. The coconut macaron is a French pâtisserie icon and can be identified by its two smooth shells, paired together by a ganache filling. When it’s coconut flavour, the confusion only increases… Little stacks baked to golden perfection, the coconut rocher is made with shredded coconut, sugar and egg whites. It’s a simpler, more rustic version of our Macaron de Riquewihr. A speciality of the Maison Alsacienne de Biscuiterie, the Macaron de Riquewihr is more elaborate than the Rocher Coco and stands out with the finesse of the techniques used to make it.
How do we make our Macarons de Riquewihr?
Shredded coconut and cane sugar are the key ingredients in our Macaron de Riquewihr and they’re the first additions to the mixing bowl. Skilfully mixed with egg white, the resulting mixture is then shaped into a "small fluted dome” before being baked to golden brown perfection.
