Schnetzwecka: a bread roulade with dried fruit

The Schnetzwecka (also known as a Schnitzwecke, which literally means “bread with dried fruit pieces”, formed by the Alsace dialect words Schnitz (which means “slices”) and Wecka (which means “bread”)) is a brioche roulade, generously filled with dried fruit: walnuts, almonds, pear, apricot, raisins, figs and prunes.

Expertly shaped into a long roulade, this treat is traditionally cut into generous slices to enjoy during the Advent period in the run-up to Christmas.

A traditional cake for Advent

Joining the Christstollen, the Beerawecka and the Kougelhopf, the Schnitzwecka is another of Alsace’s emblematic Advent cakes. Traditionally prepared by families and shared during festive get-togethers, it brings people together over warming, rich indulgence thanks to its plentiful helpings of dried fruit and nuts, along with its moist texture which means it can be kept and enjoyed over several days.

Still to this day, it pairs deliciously with a hot cup of tea or mulled wine and is a must-have for end-of-year festivities, adding an exquisite touch of Alsace to any table.

The Schnetzwecka: a very local speciality

Whilst it may not be as widely known as other Alsace pâtisserie classics, the Schnetzwecka is a rare and beloved speciality from our region. Originating from the Munster Valley, its roots are incredibly local to us and it deserves its time in the spotlight beyond the borders of this little corner of Alsace. Understated yet wonderfully authentic, it is a wonderful addition to the wealth of indulgent traditions that Alsace has to offer.

Perfect for Advent, the Schnetzwecka is best enjoyed cut into generous slices, served alongside a spiced tea or mulled wine.
