The Schenkele, a beignet for lovers

The Schenkele — or Schankala — is a carnival beignet with a unique history and an equally singular recipe. Traditionally gifted by young girls to their loves on the second Sunday after Ash Wednesday, these little beignets carry a romantic tradition in every delicious bite.

To this day, this speciality hasn’t lost any of its symbolic charm, perpetuating this affectionate gesture with deep roots in the Alsace heritage.

Almond, organic spelt, lemon and kirsch

Our Schenkele is crafted following a carefully honed Alsace recipe. The dough incorporates almond, organic spelt flour, a touch of candied lemon to add a hint of zest, and Alsace kirsch to add delicate, fruity notes. This formula gives the beignet a texture that is satisfyingly dense yet fluffy, setting it apart from classic brioche beignets.

Shaped into an elongated form, the dough is then deep-fried to reveal a fluffy interior with a golden-brown exterior.

Coated in cinnamon sugar

Once fried to perfection, each Schenkele is gently rolled in a cinnamon sugar, to give it a generous coating that adds a sweet crunch to its surface with warming, spiced notes. The cinnamon harmoniously intertwines with the kirsch and lemon, creating a subtle yet indulgent aromatic balance.

A beignet for sharing

The Schenkele is best enjoyed at room temperature, so that you can savour its cloud-like texture and aromas of almond, lemon and kirsch. Served alongside a tea, coffee or infusion, it makes a natural choice for a midday treat or teatime accompaniment — perfect for celebrating Mardi Gras with friends and family — this speciality is fully in the spirit of sharing.

Enjoy this beignet during a tea break, with friends or family, to celebrate Mardi Gras in traditional Alsace style. The Schenkele pairs particularly well with a black tea or spiced infusion, the cinnamon sugar and kirsch beautifully elevating their aromas.

Organic spelt flour (GLUTEN) 35.8%, sugar, EGG, butter (MILK), ALMOND, candied lemon peel paste (lemon 51.5%, glucose syrup), kirsch, salt, cinnamon.

All our products are made in a bakery which uses wheat flour (gluten), milk (lactose), eggs, nuts (almond, hazelnut, pistachio, walnut), sesame, soya derivative, peanuts and ingredients which may contain traces of sulphites.
