There's no doubt about it, summer is here and we're already looking for freshness in every little thing. There's no better way to cool off than with a delicious, light and naturally thirst-quenching sorbet. The winner in its category is lemon sorbet, and what's more, it's lightly acidic, enough to put the sun in a tub...
So what's the secret of a good lemon sorbet? Fresh ingredients and a perfect balance of lemon acidity and sugar make for the ultimate summer dessert. Discover all our tips in our lemon sorbet recipe:
Easy
15 minutes (+ 3h freezing time)
For 4 to 6 people
1. In a saucepan, bring the water and sugar to the boil to form a syrup. Simmer for 2 minutes, then remove from heat.
2. Add the lemon zest to the still-hot syrup to infuse, then leave to cool completely.
3. Stir in lemon juice.
4. Pour into an ice-cream maker and churn until firm (approx. 30-45 minutes).
5. Pour into an airtight container and freeze for at least 3 hours before serving.
For an even lighter texture, add a stiffly beaten egg white at the end of the whirling process (just before the last phase of freezing), to aerate the sorbet and give it a softer texture.
