Using flowers in gastronomy

Whilst most trees have already blossomed, we’re missing the endless rows of flowers and their heady fragrances already… Even though this flowering phase is always over too quickly for our liking, luckily for us there are always ways of enjoying the beauty of flowers throughout the year, such in our dishes. In this article, we’ll show you different ways in which you can use flowers in gastronomy, from simple decorations to floral recipes.

Edible flowers as the finishing touch for dishes

Many chefs and foodies use flowers to brighten up their creations. They add extra colour, shapes and original textures to fishes, transforming a simple dish into an elegant culinary experience. Through this edible art, two passions meets: gastronomy and horticulture. Some people have even made it their speciality; we call them culinary florists.

In addition to their vibrant colours, flowers offer subtle aromas and unique flavours to enhance gastronomic combinations. Some flowers, like pansies or calendula, have delicate and slightly sweet flavours that go beautifully with salads or fruity desserts. Others, such as nasturtium, have a peppery taste that pairs well with savoury dishes. Sometimes, flowers can be used directly in the composition of creations, particularly in pâtisserie.

Flowers taking centre-stage in creations

Flowers can also take centre-stage in creations to add unique flavours. In the art of pâtisserie, they’re sometimes incorporated directly into the butter composition. Amongst the most commonly used floral ingredients in gastronomy, you’ll find orange blossom and violet. They can be worked into a multitude of creations: preserves, pâtisseries and sweets, to name but a few…

Our Maison is passionate about innovating whilst also upholding age-old traditions, which is why we’re proud to present to you our latest product, in celebration of Mothers’ Day: the Sablé Rubis. This delicious biscuit combines the satisfying crunch of a buttery biscuit with an indulgent touch from a literal cherry on top. Its piqued heart form also makes it the perfect way of saying “I love you” to those special ladies in our lives…

To add a new flavour dimension to our biscuits, our Maison drew inspiration straight from nature and flowers, timeless symbols of beauty. The piqued form of the biscuit resembles the silhouette of a daisy and the cherry on top conjures up images of the pistil of a flower which, in a few weeks, will bear beautiful fruit.
