Seeing the almond trees in full bloom in the Spring is truly a simple and moving beauty, that nature continually offers to anyone who can take the sight in with love and respect. As springtime peeks out from the winter clouds, the almond tree - Prunus amygdalus- is one of the only fruit trees to bless us with its magnificent white bloom. When ripe, the green and plush skin of its oblong-shaped drupe (the fruit surrounding the nut) dries out and opens up to release its precious fruit: the almond. Our patisserie bakers had this wonderfully poetic process in mind when they had the idea to enhance its taste by creating these lovely biscuits: the almond moelleux.

Almonds and savoir-faire: Our true wealth

Creative and elegant, our almond moelleux (pronounced "mwel-luh" and meaning "soft", so you can show off your French skills to your friends) are the result of unique savoir-faire and expertise. Standing out with their generous dose of almonds and melt-in-the-mouth texture, these little unique moelleux biscuits are an exclusivity of our Maison. Although the process for making these specialities may have evolved over the years, the gestures, always by hand, and time spent on each detail remain an essential step, which our Maison holds in high esteem, without exception. That's why the almonds, walnuts and even the hazelnuts in our Liabsti and Siess g’nuss are always carefully added by hand.

Thinly iced, sometimes decorated with a pistachio, almond or sugar crystal, these delicious mouthfuls are a true pleasure for the eyes before they're even tasted!
