The Rosenkuchen — also known as a Schneckekueche in the local Alsace dialect — is a generous sweet pastry shaped into rose forms, filled with almond cream and roasted hazelnuts, topped with a fine kirsch glaze. An Alsace speciality made to share, available exclusively in our stores.

The Rosenkuchen, a rose-shaped Alsace sweet pastry

The Rosenkuchen’s name literally translates as “rose-shaped cake”. Also known as a Schneckekueche — which means “snail cake” — this Alsace speciality is easily recognised by its rolled-up spiral shape which resembles a blooming rose or a snail’s shell. With deep roots in Alsace’s baking heritage, the Rosenkuchen is a sweet pastry that our Maison has perfected over the years, with the same high standards that we apply for all our creations.

Puff pastry, almond cream and roasted hazelnuts

Our pâtissiers start the creation of a Rosenkuchen with a puff pastry, light as a feather with a crisp outer layer, baked to golden perfection. On top of this, they add a generous layer of almond cream with roasted hazelnuts, giving this sweet treat a decadent character and subtle roasted aromas.

Rolled into a spiral, the dough is then baked in our ovens until we achieve that perfect, caramelised shade of golden brown. When it comes out of the oven, a fine kirsch glaze is carefully poured over by our pâtissiers, adding our Maison’s signature touch which elevates the overall creation with a delicate, fruity note.

Serving 6 to 8 people, the Rosenkuchen is a perfect option for any occasion where you want to share a treat. Whether it’s for Sunday brunch or as part of a family catch-up over tea or coffee, this generous sweet treat can be enjoyed all year round, ideally served alongside a tea or infusion with warming notes that will beautifully complement the kirsch and hazelnuts.
